easter egg straight up nest cupcakes

These wee Easter egg straight up nest cupcakes made with our natural, unsweetened yoghurt are great to make with your li’l ones over the holidays!



Makes 12 cupcakes.


Alrighty you'll need:

For the cupcakes

  • 190g The Collective Straight Up yoghurt

  • 95g plain flour

  • 50g cocoa powder

  • 1/2 tsp. baking soda

  • Pinch salt

  • 85g unsalted butter, softened

  • 150g white granulated sugar

  • 1 egg

  • 1 tsp. vanilla extract

 

For the icing & topping

  • 50g dark chocolate

  • 100g unsalted butter, softened

  • 200g icing sugar, sifted

  • 1 tsp. vanilla extract

  • Splash of milk

  • 3 Cadbury Flakes, crumbled into small pieces

  • Pack of Mini Eggs


Now you just need to:

  1. Preheat the oven to 175C and line a cupcake tray with baking cases.

  2. Combine the flour, cocoa powder, baking soda and salt in a small bowl.

  3. In a larger bowl, beat the butter and sugar together until light and creamy. Add the egg, Straight Up yoghurt and vanilla extract and mix together thoroughly.

  4. Add the mixture from the small bowl gradually into the larger bowl, mixing continuously until well combined.

  5.  Spoon the mixture equally into the baking cases, then pop the baking tray into the oven for 20-25 minutes. Take the cupcakes out of the tin and allow to cool for at least 10 minutes.

  6. Melt the dark chocolate in the microwave or in a bowl over a pan of simmering water, then allow to cool.

  7. Beat the butter and icing sugar together in a bowl, then add the vanilla extract until the mixture is well combined.

  8. Fold in the melted chocolate and add a splash of milk if the mixture looks a little stiff.

  9. Equally spread the icing on top of each cupcakes, then sprinkle over a pinch of the crumbled flakes.

  10. Decorate with a couple of mini eggs and serve up at your Easter party!
