Miso Baba Ganoush... perfect balance of salty and creamy goodness!
Alrighty you'll need:
300g Straight Up or Straight Up 0% Greek-style yoghurt
4 medium-large aubergines
30ml extra virgin olive oil, plus more for drizzlin'
30g miso paste
Pinch of smoked paprika
Squeeze of lemon juice, to taste
Salt & pepper to taste
Now you just need to:
Preheat the oven to 220°C, line a baking tray with foil
Slice aubergines to 1cm thick rounds and lay out on a baking tray. Drizzle over some oil, salt and pepper
Roast for 25 mins until the aubergine slices are soft and slightly golden
Once out the oven, remove the aubergine skin
Add the aubergine, yoghurt, miso, extra virgin olive oil, paprika and seasoning to a bowl or blender and blitz until desired texture
Squeeze the lemon juice and adjust to taste
