The Collective’s Straight Up Labneh x Citizens of Soil

We've teamed up with our fellow BCorp friends Citizens of Soil to bring you a creamy 'n' tasty dish, perfect for dinner parties or whatever the occasion * drool *




Straight Up Labneh x Citizens of Soil

Alrighty you'll need:

Ingredients (serves 3-4 folks)

  • 1 900g pot of The Collective’s Straight Up Yoghurt

  • Hefty drizzle of Citizens of Soil olive oil

  • 1 3/4 tsp fine flowing sea salt

  • Fresh herbs 'n' your favourite spices


Equipment:

  • 1 sieve

  • 1 large bowl

  • 1 muslin cloth

  • 1 J-cloth


Instructions:

  1. Start making your labneh the morning before you are going to serve it, so that it has time to draw out the whey within the yoghurt.

  2. Start by putting 1 ¾ tsp salt into your pot of Straight Up and mix together so everything is combined.

  3. Get your large bowl and put your sieve in this with a J cloth on the bottom of your sieve, layering your muslin cloth on top making sure to cover all of the sieve and ensuring you have enough room for all your yoghurt.

  4. Use a spatula to empty the yoghurt into your muslin cloth, then take each section of the muslin and J clock to secure this round the yoghurt.

  5. Twist the top of the cloth to make sure you have some pressure on the yoghurt and gently squeeze the bottom of the cloth where the yoghurt is held.

  6. Keep squeezing, but be careful as if you do this too hard then yoghurt will start to come out instead of whey. Once most of your whey has come out of the yoghurt, twist the cloths at the top and turn them over so that they sit on the bottom of the sieve. This will allow the whey to drain out whilst it’s in the fridge.

  7. Put in the fridge and leave for 4-6 hrs until you give the labneh one last strain.

  8. On the day of serving, take out the labneh and spread onto a plate, topping this with a drizzle of Citizens of Soil olive oil, fresh herbs and chosen spices. You can choose whichever spices/herbs that you like, but I went with freshly chopped parsley, nigella seeds, za’atar mix and chilli flakes.
