In collaboration with Koru Kids, we’re bringin’ you tasty ‘n’ simple yoghurt snacks, made with our very own suckies ‘n’ straight up! Ideal for l'il lunchboxes and picnics in the park, so summer holiday snackin’ doesn’t have to be stressful *grin*
Vegetable skewers 'n' yoghurt hummus dip
Alrighty you'll need:
Ingredients (makes 5-6 skewers)
2 Carrots
1 Cucumber
2 Yellow Peppers
Yoghurt Hummus:
1 small garlic clove
1.5 tsp ground cumin
2.5 tbsp fresh lemon juice
1 can of cooked chickpeas, washed and drained (400g)
100g The Collective Straight Up Greek Style Yoghurt
50g Tahini
½ tsp salt
Instructions:
Wash and dry all vegetables. Slice them lengthways to create large slices suitable for cutting with a mould.
Use your mould to cut out desired shapes from the vegetable slices.
Arrange the vegetable shapes on skewers, alternating colours as you go.
To make the yogurt hummus dip, grate or finely mince the garlic clove.
Blend all hummus ingredients together until smooth.
For a smoother hummus, add more yogurt until you reach the desired consistency.
Pack your skewers and hummus into a lunchbox, drizzling a little olive oil over the hummus if desired.
Frozen Yoghurt Moulds
Ingredients (makes 10):
1 pack Raspberries
1 pack Blueberries
3 pouches of The Collective Strawberry Suckies
Instructions:
Wash and dry the berries, then slice them into quarters.
Place your mould on a tray or board. Squeeze a quarter fill of suckies into the bottom of each mould, add 2-3 berry quarters, and top with the rest of the suckies yogurt until full.
Place the mould in the freezer for at least 4 hours, or until the yogurt mixture is solid.
Once frozen, remove the tray from the freezer. Turn the mould upside down and push the clusters out.
Store with a freezer block inside your lunchbox to help them keep their shape.
