straight up monster muffins

Who wants one of our Monster Muffins? A fluffy muffin base with a tasty yoghurt icing using our Straight Up Greek-style. Make them as creepy or cute as you like… we've gone for cute.

Alrighty you'll need:

  • 210g all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 130g granulated sugar
  • 50g melted butter, slightly cooled
  • 1 large egg
  • 180ml milk
  • 2 tsp pure vanilla extract
  • 110g butter
  • 350g icing sugar
  • 75g The Collective Straight Up Greek-style yoghurt
  • green food colouring
  • edible eyes (or more coloured icing)

Now you just need to:

  1. Mix the milk, egg, melted butter, vanilla extract and granulated sugar together
  2. Mix the flour, baking powder, salt together and add into the wet mix
  3. Dollop the batter evenly into 12 cake cases
  4. Bake in a pre-heated oven at 180C for 20mins or test that a toothpick inserted into the middle comes out clean
  5. Let the cakes cool fully
  6. Cream together the butter and icing sugar, add Straight Up Greek-style yoghurt and food colouring. You should have a pipeable frosting, add more icing sugar if needed to get the right consistency.
  7. Pipe onto the cooled muffins, add eyes or other creepy characteristics that you want n' enjoy!
